once in a while temp gauge goes all the way up

Changed waterpump thermostat can drive for a while approx 90 or so miles then
thegauge goes all the way up and get no heat seems full of fluid am totally puzzled any
answers

You have air in the system, fan or fan clutch bad, leak somewhere or start of a blown head gasket.

The fans turn on and off its really a 1999 how is the best way to bleed the system the screw on the top of the rad cant be opened we really dont see any leaks thanks
Does this have the overflow jug with a radiator cap?

Yes on the overflow tank has a plastic cap the problem is intermittent sometimes it will go for days before it acts up we took the top radiator hose off and filled it up
They make an air bleeder that screws on top of the overflow jug. You can buy these at advance, autozone or harbor freight This is the only way to truly bleed the system.
