What would cause service temp light to come on for a 2007 colorado but the truck is not overheating? I am doing normal driving mostly highway miles.

Old coolant, air bubbles in coolant, bad coolant temperature sensor, losing pressure in system, fans not turning on, blown head gasket, bad relay to fans, computer not telling fans to come on, stuck shut thermostat, radiator not dissipating heat, clogged radiator.

Temp sensor was changed out two weeks ago. Fan is coming on. Took truck in to mechanic shop and they said it is cooling fine and they performed a pressure test also. The analog needle gauge does not go over 210°F, but the display will read "service temp".
