Take it elsewhere to a mechanic ,,, your insurance company will pay if the problem was caused by the accident

With that much fluctuation I would do a compression test on all cylinder to confirm a bad head gasket or not and then test for exhaust in cooling system. before chasing everything else with money to just have the same symptoms, Pull the thermostat and test on the stove or just replace it, make sure your fans do your and test temp sensor and clogged exhaust, water pump, No air in system, bleed cooling system, make sure radiator is good and obstruction is not the cause. Make sure radiator cap is sealing. The gov pays $500 for each accident with a deer.

And tell them the deer ran into you. It will be covered then, if you have collision or comprehensive coverage.
