Several things to check. An air bubble in the system? Sensor is bad. Wiring to sensor is bad.

Was coolant recently changed or did it run very low? If so, SOMETIMES by putting the front of the car up on a steep hill or ramps you can cause the bubble to work it's way to the top out to the reservoir. Put the side with the reservoir higher to coerce the bubble that way. The temperature sensor can be checked with a voltmeter and YouTube. . Also the pigtail can also be checked for a reference signal to make sure it is operating the sensor.

Run the engine while putting the front of car up on steep incline. Some cars have a coolant bleeder valve or screw. I would google to see if your model and engine has this.
