Are cooling fans coming on. I had a cadillac with a broke front motor mount. It would run fine when sitting and idling but when you would drive it It would get hot in about a mile. Chained it down and it quit running hot. I would monitor system with cap off reservoir and let it warm up a little bit and then rev on it about 10 times and. Smell coolant. See if you smell coolant or has coming from reservoir.

Check coolant bypass hoses. They have tendency to clog up causing overheating issues
