My 2007 f150 has overheated twice. The first time it may have been out of coolant. I filled it and it ran fine until a month later and it overheated again and was low on coolant.
It does cool back down within a few minutes

You have a coolent leak somewhere in the cooling system need to find where leaking from and fix it.
