Why does tempature gauge move?

Truck temperature gauge increases between half and 3/4 when going up hill in
the woods at higher elevation and can smell antifreeze, when antifreeze level
checked no leaks

Obviously you have a small leak. I would do a full cooling system service. Hoses, flush, belt etc. Be sure and purge air out of the system. I recommend Water Wetter to reduce operating temps.
