I have a 2011 Dodge Ram 1500, 5.7 Hemi. with 46K in miles. I was told by one of my coworkers that when I took off from the stop sign that a white/ gray smoke came out? do I need to worry? I have never noticed it before?

Also, the oil was changed less than 1,000 miles ago. Nothing was mentioned it being low and my oil pressure has stayed the same and no over heating?

White/Grey smoke can be an indication of head gasket failure. However you would typically see a rise in engine temperature. If you are concerned take the vehicle to a certified mechanic and have them take a look at it
