2012 Chevrolet Cruze: Temperature Gauge stays on cold even after driving. Getting "A/C off due to high engine temp" message as well

Last night, I got an message on the dash saying "A/C" off due to high engine
temperature." Today, I noticed that the temperature gauge stays on cold
even after driving for some time.

When I checked the Vehicle information system on the dash it said
"Coolant Temperature
-- Fahrenheit"

I popped the hood and notice the coolant was low, so I bought the kind
recommended in the vehicle book and filled it up.

Its still giving the same message of "A/C off due to high engine temp," the
temperature gauge isn't moving, and the coolant temperature is still listed at
--.

Any ideas about what could be going on? Its been really cold here recently,
but that probably doesn't have anything to do with it.

Maybe air in cooling system? The text below is cooling system air bleed. See if it helps?

i have bleed mine replace the coolant sensor changed thermostat 3 times in 3 years since owning this car, it still does the same thing if i dnt warm my car up the ac off due to high engine heat comes on and then it doesnt read my antifreeze temp at all but if i let it sit for bout 20 min its fine u ntil i do straight driving in the winter then the guage goes back to cold i have replaced everything i can think of and nothing is helping

Mine is doing the same thing and my fan runs as long as my engine runs My dash says A/C shut down due to high engine temp. It is not hot and my gauge inside is buried on cold. I have changed thermostat three times and one sensor for temp. Now what?? Junk car!!

I changed my thermostat one more time and haven’t had any trouble since so got me thinking a bunch of bad thermostats. Idk
