Is it possible to take a 1998 dodge ram 1500 v8 &
put it inplace of my v6 in my 2002 dodge dakota.

A V8 was an option so it is possible. You may end up with smog system issues and you will need the engine wiring harness and ECU for the V8.

I was planning on pulling all the wiring harness & that kind of stuff out of the 1500 im looling at, & idk if this would make a difference with the smog system issues or not but i planned on doing a straight pipe on it, im new to doing this type of stuff thats why im asking before i try & do it.
