What CCA is required on a replacement battery for a 1991 Dodge Caravan 3.0L V6 engine with FWD?

I dont know of a requirement persay. A battery meant for that vehicle will have suffecient CCA but then of course you can always buy one that has more and it will not harm a thing.

Cold Cranking Amps @ 0° F (Primary) - 600 amps -- as Kbro said, you can go larger.
