2014 Outback tow capacity

I have a 2014 Outback w/H4 engine. I also
have a 2400# trailer on a 300# trailer, putting
the total right at 2700#. I have not towed the
boat with my car, but I’m wondering about
the cons of short distance towing (ie. to boat
launch, less than 1 mile)

You'll be fine. Greater risk is to overheating the CVT, and even that's small. Try to keep tongue weight down to 100lb if you can.
