how to change head gasket on a 2003 honda odyssey

That would take 2000 words or more. If you have to ask, either get a good book from Amazon, or even a parts store but more expensive... or just have it done. I know, easy for me to say, not my money, 90% of the cost is labor but it's just not practical to write it out here. But if you do, a couple suggestions: use NEW head bolts, and don't even start unless you have a good tool set, including torque wrench

Not a do-it-yourself type job. There are too many things that have to be just right or you'll be doing it again. If you fail to properly set the valve timing, you will be buying a new or rebuilt cylinder head and doing the job a second time.
