coolant problem

I use water instead of coolant because I live in a place that doesn't get too cold.., but I am going to
Tennessee for Thanksgiving this weekend for the whole week. Do I need to flush out the water and put
in coolant?

You will be ok for that trip with just water. In the long term though you should have coolant because it not only protects your system from freezing, but also lubricates the water pump and provides corrosion protection to the internal cooling system components. If you run water too long you will be promoting corrosion to the system and this "rusty water" is not a good lubricant for the pump.
