How to drain Freon for a demo derby

I'm prepping my first car for a demo derby and
draining the Freon is one of the last things to do
but I don't know where to start

To do it legally you need a pump set up to evacuate AC systems.

DO IT LEGALLY as a certified AC center that will recycle iy. Seriously!
