Chevy vaporlock? Confirm please!

I have a Chevy C10 with a 305 Quadrajet. I'm going
to use one example. I start the truck, it runs fine, it
idles fine, and starts fine. On a really hot day, I'm
driving down the road and it just starts cutting out
on me. Like I'm flooring and letting off the gas real
fast. Then it dies. I Coast to a stop and it won't
start. I leave the truck for a couple hours, come
back and it starts right up. Now I haven't had this
issue for a while now. I found out that the
thermostat was stuck open, so I changed that. I
also put a manual gauge in instead of a dummy
light. And it shows the temperature being fine. Did i
fix the issue? I also put a new fuel line in. Could
those have been the issue? Or am I going to be
stuck on the side of the road again?

Had a 81 6 cyl. With same problem, I changed the fuel filter on the inlet side of carb.and that fixed it every time ,had to change every so often
