Returned to my car and saw the sunroof and all windows fully open? Why did this happen?

Problem in the locking system.. Not the FOB unlock. Take it to the Honda dealer they like Warranty work. No fee

By any chance did you press the unlock button on the key fob and hold it? Our older Honda (2011) would roll the windows down and open the sunroof if you held the unlock button on the key fob.
