You probably didn't bleed the cooling system when refilling with coolant.
Have the radiator cap off, run the engine to operating temp. when it is warming up until the thermostat opens it may push coolant out the top of the radiator, thats normal, just pushing the air out, keep filling until full while running, put the cap back on with the engine running. Check the coolant reservoir the next day after it has all cooled down, make sure it is full to the cold line.
There should be one sensor by the water pump, and the other is in the cylinder head. Did the engine seem to overheat or is that what the gauges said it was doing? A air pocket would make an erratic reading also, but motor would be hot. Should try bleeding out first to see if you need to replace the temperature sending units.
