Driving without cats for a short time will not mess your engine up, but without the O2 Sensors, the engine will not run properly, either too lean or too rich. Also it is against the law in most states to run cat less and you will not be able to get the vehicle inspected. I would be more worried about driving on 2 year old gasoline.
