Intermittent overheating

Ok guys I have 2003 montana mini van, about a
month ago I replaced the tstat, have bled the
system multiple times. Problem I'm having is for
some reason it will overheat. Have checked the oil
it's where it should be, sometimes when the temp
comes up I can jack the heat up and the temp
comes back down other times it will blow cold and
I'll have to get it off the road. I have racked my
brain but just can't figure this one out

Don't know if the cap is original. Didn't flushed the heater core. Gonna sound like a stupid question but how do I go about flushing the core?
