what happens if my battery gets low while driving on the road in my 2021 RAV4

A little late here, but the RAV4 hybrid does not have an alternator. The 12V battery is charged by the traction battery (the one that powers the electric motors) The traction battery will not get low since the gas engine is on almost all the time. It will continue to charge the battery. Also, the 12V battery is not used for starting the gas engine, the traction battery does that. The 12V battery is only used to run all the electronics.
