Temperature problems

My 1995 transam temperature stays round normal
when driving but when you give it more gas it gets
warmer it gets around 210 or so but when you let
off the gas it cools down

could the electric fan or thermal switch still be okay?
210 is not bad. Most cooling systems keep the coolant temp just below boiling which, in a 50/50 coolant mix with water, allows them to run 200-220 without a problem. Unless something else is giving you a problem, I would continue to run this way.
