A mechanic just put a new coolant fan and radiator on my daughter's 2003 mazda protege (no turbo). The antifreeze coolant is backing up in the reservoir bottle. What could be doing that?

It is normal for a certain amount of coolant to be in the reservoir bottle - that is what it is for. If you look at it you will see a "hot" line and a "cold" line indicating what the level should be when hot or cold. Coolant expands and contracts and the bottle takes up the change in the level.
You failed to say why the mechanic did all that work . .. and if it solved the problem. Some coolant is supposed to "back-up into the reserrvior
