How to change oil, air filter and fuel filter in 2005 Passat TDI wagon?

any local garage will perform this job having a pit or lift to get car up off ground.

Agreed, I would have a mechanic you trust do it the first time -- ask him to let you watch, then you will be able to do it the next time. That's how I started out.

This Passat TDI has a very specific oil requirement, so the most important thing to do is make sure the proper lubricant is used, or else massive headaches await you someday in the future!
