Could someone give me ideas of what it's doing, and what might need fixed?

My 2000 chevy 1500 with a 4.3L has a issue sometimes
when I start it. It will start fine but sometimes when I first
start it, and try to drive it. The truck will not accelerate and
drops rpms, after 5  or 10 minutes it will stop. It has done
that to if I have taken the interstate, not when im driving but
when I stop when I pull of the exit it will sometimes do it.

Does the check engine light come on when this happens? If so, scan for the trouble codes.

I have scanned it the light is on but some days it's off. The last time I scanned it show that I needed to replace the fuel pump. I replaced the fuel pump a couple weeks ago.
