I have a 1995 LT 1 engine code P in a 1981 Corvete. If the engine temperature is to high will it cause the engine to shut down, until the engine cools?

Yes, the engine will shut down when it gets really hot and seizes. Just joking! No, I don't think Corvette's had that feature... That was something that started in Ford Motors in the late 80's/early 90's
