The towing capacity for the 01 silverado 2wd with the 5.3 is 7500 pounds. For your car trailer, you should weigh it. And subtract the trailer weight from the towing capacity. For the R/V the weight should be on the Id tag near the tongue.
If your gonna do lots of heavy towing I would recommend getting the transmission upgraded. Those stock 4L60E transmissions will only last so long if you do lots of towing. Best to always maintain trans fluid. When doing lots of towing i commonly see the 3-4 clutch packs go out. Getting an upgraded kit put in your 4l60E will mean you can tow and know you will not have a problem with the trans. Just always maintain the fluid. Change fluid at or around 30,000 miles.
I would look into getting a bigger truck. A 1/2 ton is a bit light for hauling a car trailer loaded with cars, it's fine for towing your camper trailer. I would start looking at 3/4 ton trucks.

I have a 2005 Avalanche. It's the 5.3 4L60 combo with 240000 miles on it I tow my boat and motorcycle trailer all over the country. I don't have any problems. Upgrading the transmission is a great idea once the 4L60 starts to give up but they are tougher than most give it credit for. If you are seeing bad 3-4 clutches. Advise your customers to use the towing mode. This locks out the fourth gear upshift. When mine does die and they all eventually do. I will upgrade the sun shell Input drum and the band and servo. That will do the job right. The real problem with towing weight on these trucks is the spring capacity. they were meant to ride nice, not so much as haul stuff.
