2002 Ford Explorer V8 Oil Temp Issue

My Oil Temp gauge will suddenly spike and the Low Oil light comes on. Oil
level and pressure are fine. Turn the engine off for a minute or two, and it
reads fine when restarted. May happen again a mile down the road or
sometime next week. No other symptoms; engine sounds fine, doesn't feel
abnormally hot, no smoking oil on the dipstick. Had my oil changed a
couple of weeks ago. Could they have affected the sensor?
