Acceptable Running temp

I bought a 2002 for Taurus ses3 flex fuel. It had a after
market Temperature gauge installed . With the air
conditioner on I have change the thermostat to I 195
operating from the 190 .My question is this is this
acceptable normal behavior or should I be worried I'm not
losing any water or coolant that I have to replace .Looking
for any advice besides flushing the Radiator .Ccording to
the autozone it has aluminum heads Freaks me out .

If you have a 195 degree thermostat and your aftermarket gauge shows 190 you are fine. If it gets up over 205 then you should be concerned.

With the engine cool, pull off the end of the upper radiator hose at the thermostat housing, remove the thermostat. Start the engine. If coolant flows out of the housing the water pump is likely okay. Or you can remove the end of the lower hose at the radiator and start the engine to see if the pump is working and also that the radiator isn't clogged. Good luck!
