After changing the rear brake shoes pedal is now spongy. Is it true that by driving in revers you can adjust the rear shoes by applying the brakes?

yes,adjust them then bleed all the brakes starting at the one farthest away from the master cylinder.

You can also go in reverse and use the emergency brake to stop the vehicle that will adjust the brakes also. But the best thing to do is to spin the drum and adjust the shoes to slightly drag on the drum.
