If it was really cold out it may have frozen the antifreeze due to more water than antifreeze in the system. How is it now?
It also may have been the thermostat stuck and finally opened. I would change the thermostat, put the right amount of antifreeze in it 50 50 and use an air bleed system on it to get the air out. I think you have air in the system. The air bleeder can be bought at advance, autozone, harbor freight.
electric cooling fan is not coming on. If your engine is reading close to the max, look to see if the fan directly behind the radiator is spinning. If not, check fuses for the engine fan, maybe bad fan motor also.
