why do all of my doors lock when engine is running and all doors are closed`

When I start my car in the winter to warm up and I get out and close the door all doors will lock. I must use a key to get back in. this happens all the time whether winter or not. If I am driving and unlock the doors it will automatically relock

It depends on how the body control module is programmed. I'm not aware of a vehicle locking itself while in park with the engine running, but I could be wrong. Typically, the doors will lock when the vehicle is put into drive and after a programmed length of time in the BCM. This locking feature is built in for safety while in the vehicle not out.
Honda's have a customer-programmable "auto lock/unlock feature," I'd look up how to set it in the owner's manual or on Honda's website.
