Temp problem in a 2005 ford focus

I have a 2005 ford focus

This has been an issue I’ve been having. There will
be some days I’ll be driving and the car drives
normal but some days I’ll be driving and I see the
temp gauge go up (like in the picture) then go back
down to normal temperature. The following parts
have been changed:
-new temperature sensor
-new coolant
-new thermostat
-new water pump
-new radiator and fan still working normally
-new aftermarket coolant hoses and coolant
reservoir

Note the AC is not on when this happens and I’ve
been told it could my head gasket going bad or
catalytic converter going bad and someone told me
it could be the weather since this only happens
mostly in the summer time and not the other
seasons.
I got to a point where I’m not sure what’s going on
so any answers would be helpful

Most likely the cooling system needs a good flush with a chemical cleaner. You probably have sludge and junk in the cooling system passages that is restricting the flow of coolant through the cooling system. Jim
