MY2011 Volkswagen routan 3.6, temp goes up and down at random change
water pump flushed cooling system new radiator. Does not go over 220 yet,
any ideas what causing this Mostly does it at higher speeds Can idle all day
temp stays fine.

Your thermostat failed-- this is a well known issue with these cars-- Chrysler did a bang up job with these motors!
I`m sorry forgot to mention that was the first thing i replaced I wished it was that simple

Hello I did exactly the same, replace the cooling fan temp sensor, new fans, new water pump, new thermostat , I check the radiator, change the engine head gasket etc... and the temp always goes up 215 to 220 F

I had random temperature variations at idle and while driving and then terrible overheating on the 401 in Canada. It was just the thermostat. Now, however, I've got a new problem. Random overheating at idle, never while driving. The fan comes on and then immediately shuts off. So, I know it's a fan control issue, but I have no idea what. Doesn't the fan run off the same temperature sensor that runs the dash temperature gauge?
It sounds to me like your cooling fan controller went bad. Thermostats don't get stuck closed… Anyhow good luck. You can fix it real easy, by hardwiring the thermostat control to an ACC source. That means why are the fans to a source of power that runs only when the car is on. If you do that make sure you put an in-line fuse of 10 A or less
