2004 Ford Ranger Keeps Freezing in place!

Evening,
So its been cold as hell here and the past few days ive gone out to my truck to start it and drive to where ever. I place my truck into gear and typically whether in drive or reverse it will automatically start moving, like most vehicles do. Problem is...this does not occur. i have to give it an unordinary amount of gas and Bang! it pops out of place.
About a month ago i had mechanics refill the rear differential fluid and replace the seals. Also, they drained the transfer case fluid and added new fluid to it. Is this fluid freezing? If anyone has any ideas i'd greatly appreciate it.

I would hope the tires are not frozen. It's done this on 3 separate occasions. Once on gravel, once on the snow in my parking lot and once in a parking garage today. I've gone through 4 winters with this truck. Seems odd that shortly after I get new differential fluid and transfer case fluid that this starts to happen.
I don't think I have a limited slip? My truck is automatic
Also, on a side note. I did my brakes over the spring and discarded the metal clips(brake pads would not correctly fit into the caliper with the metal clips). Do you think the pads could be freezing to the rotor?
Okay, you're right. I'll have the shop look at the rear differential fluid, not sure what kind they put on there but I'm gonna find out today.
Okay. Then it sounds like its probably the rear diff. I'd check it myself, but its difficult to try to listen/look for the sounds while sitting in the truck. Gonna recruit a work buddy to give it gas while I look forward the noise.

fluid or grease or oil shouldnt freeze no matter whats put in should it ? if it just started after they did the seals and changed the diff.oil ..i hope they did put the C clip back in which im sure a mechanic wouldnt forget that ,,only other thing i could think of would be somehow the brakes getting wet just before you park it ,,, IDK hope you get it figured out...
Yeah, I'm hoping to get it fixed too. It's just odd, only has happened the past week with the coldest days where the temp is below zero
