ford escape overheating at 30 degrees celsius!? Very short drive

Once last summer in Alberta on a long drive when it was about 25-30
degrees celsius out, and now again today I am getting a warning from the
car that the engine is over heating and to pull over. How ever, the
temperature reading on the dash is at a perfectly normal temperature, below
the red for sure.
What could this potentially be? This doesn't seem like correct operation.
Note: I have recently gotten my vehicle serviced, and with the last summer
incident in mind made sure to have them check the cooling system and they
found no issues there.

I would use a non contact thermometer to check the actual operating temperature. A reading at the top radiator hose by the thermostat should be the most accurate.
