What assurance is there that a car is in the condition I expect? For example, there are cars that have smells that cannot be covered up. What happens if I have a car transported to me and it simply stinks.

None at all unless the seller gives you a written return policy. Hire an inspector or inspect the car yourself! You will rue the day you did not.

Honestly, I wouldn't buy a car without looking at it in person. The only thing I know without looking at the car is if it looks too good to be true, it probably is. And also ask questions and challenge their knowledge of the car. In doing that, you could catch them in a lie and see if they're redirecting you or dodging certain questions.
I have been looking at houses to buy. You can have 100 high quality photos and look at satellite views and Google street view the whole neighborhood and still learn far, far more about the house in 5 minutes in person. There is NO substitute for a test drive.
