Flashing Temp Light during cold winter starts

I have a 2015 Jetta TDI. This winter, the temp light will blink when I start the
car. It eventually stops. Temps outside have varied from 17 to 23 to 32. What
could be causing this?

I would guess that it's your coolant sensor but first, check where the wires/plug connects to the sensor itself. It could be as simple as a bad connection. If the issue persists, purchase a new coolant sensor ($35-$40). There are videos online to help you change it yourself meaning any shade tree mechanic can do this job. Hope this helps.
