Coolant is bubbling into the
overflow tank when it's shut off?

Might be normal if the level doesn't change and the truck doesn't overheat. Coolant expands and contracts when warm and then cold. You can perform a pressure test on the cooling system to see if you have a leak somewhere or a cylinder pressure test to make sure the head gaskets aren't a problem.
