Ok so I first realized that my cars heater was not working unless I went past a certain speed and then today after driving on the highway, I came off to turn on my street and my thermostat shot up to H and I had to turn off my car to cool down. I only turned it off for like two minutes before turning it on and it going back to normal. What could it be?

When the engine is COLD I repeat C O L D! Check your coolant level. I'll bet it's low. There's a reason why it is low. It's going somewhere. Find out where and where it's going.
