Engine stalls service engine light comes on and the engine dies dies when driving over water when it dries out the service engine light goes out, and runs strong

Well I guess you'll have to put your trans-Atlantic drive on hold then. Since a CEL came on, get your trouble codes read. It'll give you much more insight to the problem. If it is coming on only because engine is stalling or dying (in the case of the engine losing electrical power) then check the battery and cable connections, look for any frayed, loose, or corroded connections. Maybe clean the battery terminals, apply some dielectric grease, and reseat cables. Then check grounds on battery harness. Driving over water can jar wires around, in addition to creating shorts.
