Have a f350 7.3 diesel. Replaced fuel filter. No signs of leak. Even soap tested it. Now it will hunt and shuts off while driving

Did it run properly before replacing the fuel filter? Did you use a genuine Ford filter as the replacement? If not, that may be your problem as some Ford diesels are very picky about which brand of filter they like.
