2001 VW Passat GLS 2.8L V6 Overheating

I have recently purchased a 2001 vw passat and it
has an over heating problem, the radiator holds
pressure, the fans spin, and the water pump was
replaced 30k miles ago. It'll stay at around 190
degrees and then all of a sudden the heat gauge
will jump and itll beep that it is overheating.
