Overheating

I have an 04 300M and whenever I'm driving the
temperature stays under operating temperatures
but once I stop and sit for a couple of minutes the
car wants to start overheating and the temperature
needle will fluctuate just below red and then back
down to operating position does anyone have any
idea on what it could be
