Ran out of coolant filled up now its stalling/shutting off

I have a chevy captiva and I ran out of coolant, I didn't get a check engine
light, but when I checked my fluids i saw I didn't have any coolant.. I added
coolant and now it is shutting off when I am driving the temp ranges from
190-220 degrees. The temp shoots up in the morning. It shut off on the
highway 3 times this morning. after I start it back up the temp gauge drops
down 5 or 10 degrees.
