Why when I turn on heater starts with warm air but a few seconds later the ac
compressor kicks in and the starts throwing cold air even though the know is in
the red for heat?

When using the heater, the A/C will kick in if you select the defrost function but it usually does not over ride the heat. Maybe for Winter you can pull the fuse or the wire for the A/C clutch so the A/C compressor can not run at all.
